What began as restaurateur Jenn Saesue’s journey to find a suitable birthday cake for her husband has now turned into a first-of-its-kind new venture in New York. Opening September 25th, Bub’s Bakery is a new concept that offers pastries, sweets and savory items free of all major allergens.
“We saw a clear gap in the market to create something that didn’t exist: a bakery that creates a seat at the table for those with dietary restrictions while offering pastries everyone wants to enjoy,” Saesue says.
The New Jersey born, Bangkok-raised restaurateur is the cofounder of 55 Hospitality, which operates Thai restaurants Fish Cheeks and Bangkok Supper Club. She was inspired to start Bub’s, named for her husband’s nickname, after finding that bakeries were either gluten-free or dairy-free or nut-free, but never all at once.

She and 55 Hospitality partner Chat Suansilphong approached James Beard-nominated baker Melissa Weller about bringing their vision to life.
Weller had baked at a long list of places including Per Se, Bouchon Bakery, Roberta’s, and Sadelle’s, and was interested in the challenge Saesue and Suansilphong posed to her.
“For me, Bub’s Bakery is about rewriting the narrative around allergen-free baking,” says Weller, who has spent several years testing and developing the recipes. “It’s not about limitation, but rather about possibility. I don’t want to make the best-tasting allergen-free pastries, I want to make the best tasting pastries, period. We’re working to create treats that feel indulgent and inventive in a way that everyone can enjoy.”
The opening menu includes a cinnamon roll with brown sugar cinnamon butter and cream cheese frosting; a blueberry maple scone; a roasted mushroom bechamel and mustard danish; banana bread; a biscuit, egg and cheese sandwich; an eggplant tomato brioche, and “Bub’s Cups,” which are desserts like banana pudding and pumpkin pie cheesecake served in a cup. All items are free of soy, nuts, eggs, gluten and dairy.
“The response so far proves how needed this concept is,” Saesue says. “Bub’s Bakery isn’t just about providing a safe option; it’s about setting a new standard for what a modern bakery can be.”
